QUICK POTATO SOUP 
5-6 Idaho or red potatoes
3 cups water
1 onion
3 tbsp. butter or Olive oil
4 tbsp. flour
crushed red peppers
black pepper
4 cups milk
1 1/2 cups cheese
1 1/2-2 cups cubed turkey ham
2 cloves garlic (optional)

Peel potatoes and cut into cubes.

Add potatoes to boiling water, cook until tender. Drain, save 1 1/2 cups of the liquid. (Add water if necessary.) Set aside.

Peel and chop onion. Melt butter (or olive oil) over medium heat. Add onion to sauce pan; cook, stirring frequently, until onion is translucent.

Add flour to sauce pan; season with pepper flakes and black pepper. Cook 3-4 minutes.

Add potatoes, saved cooking liquid, and milk to onion mixture in sauce pan; stir well. Add cheese and turkey ham.

Simmer over low heat for 30 minutes stirring frequently (so that it does not stick to the bottom of pan).

NOTE: Very good in bread bowls.
