HOT BEET SALAD | |
2 tbsp. corn starch 2 tbsp. sugar 1/2 tsp. salt 1/4 cup organic good quality vinegar 3/4 cup water 1 pint cooked diced beets 1 tbsp. chopped onions, raw 3 hard boiled eggs, halved Combine sugar and corn starch, add to vinegar and water. Simmer over slow heat until the mixture thickens. Add beets and onion, heat through and pour into a serving bowl. Remove shells from eggs and slice in half.
