SURPRISE DATE LOAF 
3/4 c. boiling water
1/2 c. lb. dates, finely chopped
1/4 c. shortening
1 egg
2 c. sifted flour
1 tsp. baking soda
1/2 tsp. salt
1/2 c. sugar
1 egg, well beaten
1 c. shredded cheddar cheese
1 tsp. vanilla
3/4 c. chopped walnuts

Pour water on dates; let stand 5 minutes. Sift together flour, soda, salt, and sugar. Add date mixture, egg, cheese, vanilla, and nuts. Mix well. Pour into greased 9 1/2 x 5 1/4 x 2 3/4 inch loaf pan. Bake at 350 degrees for 45-50 minutes. Remove from pan and cool on rack. Makes 1 loaf.
