DATE LOAF 
1 1/2 lbs. pitted dates, chopped (I cut them with scissors)
10 oz. pkg. miniature marshmallows
1/4 c. milk or less
2 c. pecans or walnuts, chopped
1 lg. box vanilla wafers, about 14 to 16 oz. rolled fine

Place marshmallows in double boiler over hot water. Add milk and heat until mixture is melted and smooth. Remove from heat. Add dates, nuts and enough crushed vanilla wafers to make a heavy consistency. Roll into any desired shape, adding crushed vanilla wafers as needed. Wrap in aluminum foil and refrigerate overnight. Serve thinly sliced with whipping cream or hard sauce.

This recipe will make about 3 date loaves, approximately 8 or 9 inches long.

I usually make the loaves or logs, as some people call them, as they are easier to handle and work with. Will last a month or longer in refrigerator, if tightly wrapped. They freeze GREAT! I've kept them for several months and they have never been anything but terrific.
