GEORGIA PEACH PICKLES 
6 lbs. peaches, peeled
1 pt. vinegar
1 pt. water
3 lbs. sugar
2 tbsp. whole pickling spice
6 whole cloves
3 sticks cinnamon

Put spices in a bag before boiling. When peeling peaches, immediately drop in solution.

SOLUTION:

1 tbsp. salt
2 tbsp. vinegar
1 gallon of water

This prevents dark coloring.

In large pot, bring vinegar, water, and sugar to a boil. Add spice bag and boil for 30 minutes covered. Remove spices and add peaches. Simmer until peaches are tender, 5 minutes. Remove peaches and pack into glass. Cover with hot liquid and seal.
