IRISH SODA BREAD 
2 1/2 c. flour
2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
5 tbsp. Weight Watchers butter
2 tsp. dry sweetener
1/4 c. Egg Beaters
1 1/2 c. buttermilk
1 c. raisins
1/2 c. currants
2 tsp. caraway seeds

Sift together and set aside first 4 ingredients. Cream together butter and dry sweetener. Mix Egg Beaters and buttermilk and add to creamed mixture. Add liquids to dry mix; stir by hand until just blended. Add 1 cup raisins, 1/2 cup currants, 2 teaspoons caraway seeds.

Pour into sprayed 1-quart casserole, pie plate or iron skillet (use Pam or whatever). Bake at 350 degrees for 30 minutes, then at 325 degrees for 10-15 minutes or until done.
