IRISH SODA BREAD
3 1/4 c. flour
1/4 c. sugar
1 tsp. baking soda
1 tsp. baking powder
3/4 tsp. salt
1/2 c. butter
1/3 c. currants or raisins
1 1/3 c. buttermilk

Heat oven to 350 degrees. Combine dry ingredients; cut in butter until mixture resembles coarse crumbs. Add raisins and buttermilk, mixing just enough to moisten. Shape into ball; knead on flour surface 10 times. Place on greased baking sheet. Shape into a round loaf, 2 1/2 inches thick; cut a 1/2 inch deep cross on top. Bake at 350 degrees for 1 hour. Serve warm. NOTE: Roll loaf in sugar before placing on baking sheet, if desired.
