EASIEST & BEST HOMEMADE ALFREDO
SAUCE
 
This by far is the easiest and best Alfredo sauce recipe I have found yet! I love pasta and Alfredo and searched forever to make it homemade. I think that too many recipes have too many ingredients and that others are too watery. My girlfriend loves it and makes me cook it at least once a week.. plus you can add it to so many different things! This is a great, simple recipe to make for someone coming over for a dinner date ;)

1/2 cup (1 stick) butter
1 (8 oz.) pkg. cream cheese
1 cup half and half
1/3 cup Parmesan cheese
1 tablespoon garlic powder (optional)
pepper, to taste

1. In a medium saucepan, melt butter.

2. Once butter is almost melted, add the package of cream cheese. It's easiest to cut it into 4 pieces so that it melts quicker.

3. Once butter and cream cheese are mixed well together, add the cup of half and half, Parmesan cheese, garlic powder, and then shake pepper on top. Stir all together until well mixed.

4. Once it's mixed well and sauce-like, take it off the burner and set aside so it can thicken up. Stir every few moments.

5. DONE! Pour over your favorite pasta, I love it with tortellini!

Don't forget some bread-sticks to dip in the extra sauce! :)

I just made this tonight and my husband said it was one of the best meals I have ever made. While I relished in the compliment...I kept thinking what about all the other meals I have made over 25 years!! :) I'm a waitress..so before I made it..I had one of the cooks where I work look at it and he said.."This is how you make real Alfredo Sauce" Thanks!! I will be trying this on my 3 yr old great-grandson this weekend...He loves cheese!

I have been making my own Alfredo sauce for years. This is so much simpler. I added minced garlic instead of garlic salt. Will make this my NEW Alfredo recipe ! ! !

I am married to someone born in Italy who appreciates fine Italian cooking and we find nothing offensive whatsoever about this recipe INCLUDING its cream cheese. Never mind her - this recipe is AWESOME!! I have also made with 1/2 romano and 1/2 Parmesan.

Michael is right...this is the best and easiest Alfredo sauce ever...I've been making it like this for years and it always gets rave reviews...it's quick and yummy. It takes longer for me to boil the fettucine. Over the years I've added left over rottisserie chicken, broccoli, crabmeat, peas, shrimp...try it!

I don't doubt that this recipe might taste good and remind a person of restaurant-style Alfredo (as long as that restaurant is a chain). And I can also appreciate that if you use Neufchatel (low-fat cream cheese) and skim or 2% milk, that you might have a healthier sauce on your hands. But can I PLEASE ask what is so "difficult" about REAL Aflredo sauce? The basic ingredients are butter (yes, REAL butter), heavy cream and parmesan. You whisk together the cream and parmesan while still cold, melt the butter in the saucepan, and whisk in the cream mixture until it's hot and thick and bubbly. Use garlic, salt, pepper to taste. Really, that's it.

I don't know where the professional chef came up with white wine, but hey, I've never argued with booze in cooking. Chef Alfredo never intended his sauce to be an "everyday" sauce, as it is SUPPOSED to be rich and decadent. When you have the real thing, a little goes a long way and is a luxurious treat, as it was intended. If you're impervious to heart disease, THEN you can have it every night. ;)
