MOIST AND TENDER OVEN BAKED BBQ
RIBS
 
2 to 4 lbs. boneless beef or pork ribs
1/4 cup salt
1/4 cup sugar
3 (18 oz. ea.) bottles K.C. Masterpiece Barbecue Sauce
Paprika

Preheat oven to 250°F. Mix equal amount of salt and sugar. Add in paprika to taste. Roll each portion of meat in sugar-salt-paprika mixture. Place meat in large baking dish in about one inch of water (or halfway each rib).

Bake at 250°F for one hour - remove from oven - turn meat. Bake at 250°F for one hour - remove from oven. Drain and add barbecue sauce as needed - increase heat to 400°F. Bake 30 minutes. Remove from oven and serve.

Instead of sugar and water, I used sprite and added soy sauce on the turnover. I'm sure you can get a pretty good idea of how they came out.

I use the McCormick 's pork rub with a sprinkling of Emeril's Essence on each side after turning. I cook them in a hearty ale or beer instead of water. I like Stubbs sauce but it has a little heat to it.

Way too salty. 1/8 of a cup of salt would have been better. When selecting pork boneless ribs, try to select more dark meat. The dark meat was much more tender.

Another variation is to cover the ribs with a dry pork rub, then wrap tightly in heavy duty foil. Place on baking sheet for 2 hours at 250°F, unwrap & drain liquid. Then cover with 'Sweet Baby Ray's Sweet N Spicy BBQ Sauce', return to 350°F oven for 10 minutes. Repeat 4 more times covering with BBQ sauce each time, for a total of 50 minutes. Enjoy!

VERY SALTY! The meat turned out alright, but too much bite on the bone than I like. I prefer my ribs to fall off the bone a little more than this. I'm still searching for the perfect oven ribs recipe.

Hey Jim,
Babyback Rack Of Ribs
Boil on stovetop until pink color outside is gone.

Put in skillet and sear on both sides but allow them to still be pink inside so that when put in over they cook in their own juice.

Put in oven and bake uncovered until browner and a little crispy.

Slather in sauce cover and cook until tender.

Cook in foil or use stick proof pan, skillet, pot whatever your choice is.

When cooked this way meat will not be red or pink inside nor will it be tough it will be tender almost fall off the bone melt in your mouth good.

the last couple of minutes add onions.

Cut onion in large chunks and brown on stovetop and mix in with ribs last few minutes.

I use rays, annies or brown sugar or hickory bbq sauce.

Once you cook them this way once thereafter will be a breeze if you like the way they come out.

Salt and pepper initially but not alot of salt. If steps are too many:

1. Salt and pepper.
2. Rub down with olive oil. Put in oven uncovered cook thoroughly until brown.
3. Add sauce and cover and cook until tender.

I followed the recipe except I cut the salt to 2 tbsp. and the ribs came out moist and delicious. I used Sweet Baby Ray's, and its carmelization made the flavor extra tasty. I have never had ribs turn out this well, so I know how I'm cooking them from now on.
