EASY MACARONI SALAD 
1 (8 oz.) pkg. cooked macaroni (elbows preferably)
1 to 2 stalks celery, chopped
1/4 c. pickle relish
1/4 tsp. salt (optional)
1 tbsp. onion, chopped
3/4 c. mayonnaise
1 tbsp. mustard

Boil macaroni until tender and drain. Chill macaroni with cold water until completely cool. Drain again and mix in remaining ingredients. Refrigerate until ready to serve.

This was a good basic recipe but I made some changes and it was so flavorful. I was able to serve it immediately after mixing it up. I left out celery and instead added about 1/4 cup of chopped fresh red pepper and 1/4 cup chopped green pepper. I used red onion instead of white. Instead of salt I put in a few turns of freshly ground black pepper. I had no pickle relish, so I substituted hot dog relish and left out the extra mustard. I cut up two cheddar cheese sticks in cubes and tossed them in as well. The result was a tasty and colorful macaroni salad!

Kari, I even went better. Instead of macaroni I used tri-colored pasta and bacon bits and it turned out pretty good. The kids liked it because of the different colors and the adults liked it because of the bacon kick.

Additions are great idea's. Better than just a bowl with mayo/mustard, with only a little pickle relish and onion for flavor.

Try adding diced cucumber, carrot and just before serving - some halved grape tomatoes. Could even add few slices of black olives for color. Its called using your imagination...
