GRANDMA SCHULTZ'S MACARONI SALAD | |
My niece gave me this recipe. We always had this salad during the summer. It's great for a light lunch or supper. 1 (1 lb.) box elbow macaroni, cooked and drained 1 can crushed pineapple, drained 1 can baby shrimp, drained and dry as possible 3 to 4 celery stalks, chopped small 2 to 3 carrots, finely chopped (you can use a blender or chopper) 1 to 2 red/green peppers, chopped mayonnaise seasoning to your liking (I use seasoned salt and Mrs. Dash garlic and herb blend) In a large bowl mix elbows with mayonnaise until covered but slightly dry. Add in drained pineapple and with a fork, break up the shrimp in the can then add to bowl. Add vegetables, one at a time. The amount of vegetables you need depends on how big each is. Add according to looks and taste. Add more mayonnaise as needed until the mix is well blended. Note: We have Grandma's macaroni salad at EVERY family BBQ and summer get together.
