SPANISH POTATOES 
2 lg. potatoes, peeled, if desired & sliced 1/8-1/2" thick
1 sm. clove garlic, pressed or minced or 1/8 tsp. garlic powder
2 tbsp. olive oil
4 oz. fresh mushrooms, sliced
1 sm. onion, thinly sliced & separated into rings
1/2 tsp. salt
Dash of pepper

In 2 quart casserole combine potatoes, garlic and olive oil; cover. Microwave at high 6 minutes, stirring after 1/2 the cooking time.

Add remaining ingredients. Cover; microwave at high 4-8 minutes, or until vegetables are tender, stirring after 1/2 the cooking time. Serves 4.

Since microwave ovens vary in power, you may need to adjust your cooking time.
