LENTILS WITH ROASTED POTATOES 
2 cups red split lentils
1 carton vegetable broth (560mls)
1 Spanish onion
2 tablespoons tomato paste
4 large potatoes
olive oil
mushrooms (optional)

Peel and chop onion. In a skillet, sauté in a small amount of olive oil.

Add lentils, broth and tomato paste. Simmer until tender. Cut potatoes into cubes; add olive oil, mixing together to coat. Roast in 425°F oven until done.

Put lentils in long casserole dish. Add potatoes, stirring with a wooden spoon.

Put in 350°F oven for 20 minutes.

This recipe is heart healthy and tastes great.

I love this recipe for it's simplicity and healthiness. I did find it a little bland the first time I made it. So this time I added garlic & a little hot sauce. I roasted the potatoes with garlic as well. Delicious.
