EASY STRAWBERRY-RHUBARB JAM 
5 c. rhubarb, diced
3 c. sugar
1 sm. pkg. strawberry Jello

Combine the diced rhubarb and sugar and let stand overnight. Next morning simmer this mixture for 10-15 minutes. Stir in package of Jello. Pour into jam jars and freeze when jam cools.

I've made a similar recipe several times including for wedding take-away gifts for guests in adorable 4 ounce jars. I use 12 cups rhubarb with 2 cups sugar (if you've got good strawberries its plenty sweet). Let stand overnight and then add 6 cups strawberries. Boil approx 5-8 minutes and stir in large package strawberry jello. Proceed with hot bath for long term storing.
