APPLE CAKE #3 
3 c. tart apples, chopped
1 c. oil
2 c. sugar
3 eggs
1/4 c. lemon juice
1 c. pecans
3 c. flour
1/2 tsp. salt
1 tsp. baking soda
1 tsp. cinnamon

Place oil, sugar, eggs, and lemon juice in large bowl. Mix well. Sift together flour, salt, soda, and cinnamon. Add 1/2 of the dry mixture to the liquid. Then add 1/2 the apples, beating after each addition. Beat in remaining dry ingredients. Fold in remainder of the apples and the nuts. Bake at 325 degrees for 1 1/4 hours in a tube or Bundt pan or 3 loaf pans.
