APPLE CAKE 
1 1/3 c. flour
1 1/4 tsp. baking powder
1/2 c. butter
1/2 c. sugar
2 eggs
Rind of 1/2 lemon, grated
Juice from 1 lemon
6 sm. tart apples
2 tsp. cinnamon
2 tbsp. sugar

Combine flour and baking powder. Cream butter and 1/2 cup sugar. Add eggs, lemon rind - blend until fluffy. Add flour mixture and mix well.

Peel, core, quarter apples. Sprinkle with lemon juice. Score tops of apples at 1/8 inch intervals.

Put dough in 10 inch springform pan (greased). Press apples, cut side up, into dough.

In small bowl, combine cinnamon with 2 tablespoons sugar. Sprinkle over apples. Bake 30-40 minutes. Serve with whipped cream.
