APPLE SWIRL CAKE 
1 c. finely chopped walnuts
1 1/2 c. sugar
2 tbsp. instant coffee
1/2 c. butter
3 eggs
3 c. sifted all purpose flour
3 tsp baking powder
1 tsp. each: baking soda and cinnamon
1 c. packed, grated apples
3/4 c. sour cream

Combine walnuts, 1/2 cup sugar, and coffee; set aside. Cream butter and remaining sugar until light and fluffy. Add eggs one at a time, beating thoroughly after each addition. Sift flour with baking powder, soda, and cinnamon; add to creamed mixture in thirds alternately with apples and sour cream, beating until smooth after each addition. Spoon half of the batter into a greased 9 inch tube pan. Sprinkle 2/3 of nut mixture on top. Cover with remaining batter; sprinkle remaining nut mixture on top. Bake at 375 degrees for about 50 minutes, or until done. Cool in pan.
