APPLE POUND CAKE | |
1 1/2 c. Crisco oil 2 c. sugar 3 eggs 3 c. sifted plain flour 1 tsp. baking soda 1 tsp. salt 2 tsp. vanilla extract 1 1/2 tsp. cinnamon 3 very lg. tart apples, peeled, cored, and grated 1 c. chopped fine pecans Combine Crisco oil and sugar and eggs, beat for 3 minutes at medium speed. Blend all dry ingredients together at medium speed. Blend all dry ingredients together and add a little at a time. Add vanilla extract. Mixture will be thick and sort of sticky. Add grated apples. Fold in nuts. Grease a tube pan and line with wax paper and grease again. Spoon cake batter into pan ad bake at for 1 1/2 hours at about 350 degrees. Cool about 10 minutes in pan, turn onto cake plate nd peel of the wax paper. Pour on the following sauce, cover well and store overnight before cutting. SAUCE: 1 stick butter 1/2 c. brown sugar, packed 2 tbsp. buttermilk Bring ingredients to boil and cook about 3 minutes. Pour on cake while hot; the sauce will be thin but should soak into cake. |
