APPLE POUND CAKE 
1 1/2 c. Wesson oil
2 c. sugar
3 eggs
3 c. plain flour
1 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon
1 tsp. nutmeg
3 c. peeled and chopped apples (delicious yellow apples work well)
1 c. chopped pecans
2 tsp. vanilla

Beat together sugar and Wesson oil well. Add eggs one at a time and beat well after each. Sift together flour, soda, salt, cinnamon and nutmeg. Add dry ingredients to sugar and oil slowly, mixing well. Mix in vanilla. Stir in apples and chopped pecans. Pour batter into greased and floured (or sprayed) tube pan and bake in 325 degree preheated oven for 50 minutes to 1 hour. Do not over bake.
