OATMEAL RASPBERRY BARS | |
3/4 c. butter, softened 1 c. packed light brown sugar 1 1/2 c. rolled or quick oats 1 1/2 c. all-purpose flour 1/2 tsp. salt 1/2 tsp. baking soda 10 oz. jar red-raspberry preserves (or whatever flavor you want) Preheat oven to 400°F. Grease a 9x13-inch baking dish. Beat butter and brown sugar in a large bowl (at medium speed) until light and fluffy (about 1 minute). Add oats, flour, salt, and baking soda to the bowl; mix until crumbly. Press half of the mixture into a prepared baking dish to form a "crust". Spread preserves evenly over oat mixture. Sprinkle remaining oat mixture over preserves. Bake at 400°F for about 20 minutes (or until light brown). Cool completely before cutting into bars. Store in an airtight container. |
