WEIGHT WATCHERS RHUBARB MUFFINS 
1 1/4 c. white sugar
1 egg
1/2 c. oil
2 1/2 c. rhubarb, cut fine
1 tsp. baking soda
1 tsp. baking powder
1 tsp. vanilla
1 tsp. salt
1 c. buttermilk
2 1/2 c. flour

Stir together and put in muffin pans. Bake at 350 degrees for 25 minutes.
