DIABETIC SUGAR FREE COOKIES 
1 3/4 c. flour
1/2 tsp. baking powder
3/4 c. butter
1 pkg. sugar free Jello (any flavor)
1 egg
1 tsp. vanilla

Cream butter and Jello, mix in eggs and vanilla. Add flour and baking powder. Roll out dough 1/2 inch thick and cut in shapes. Bake at 350 degrees for 8 minutes.

Needs a little flavor. Maybe add some lemon zest and some splenda. I used vanilla sugar free pudding mix and could barely taste any sweetness. I made a lemon Icing made with splenda and they tasted great.

These are pretty good, but I agree that they need more sweetness. I rolled them in Splenda and that seemed to help. I also baked at 400°F for 8 minutes.
