FRESH APPLE POUND CAKE 
1 1/4 c. cooking oil
2 c. sugar
3 eggs
2 tsp. vanilla
3 c. flour
1 tsp. baking soda
1 tsp. salt
3/4 tsp. cinnamon
1 c. pecans, chopped
3 med. apples, peeled & diced

Preheat oven to 325 degrees.

Combine oil, sugar and eggs. Beat at medium speed for 3 minutes. Add vanilla. Combine dry ingredients. Add to above mixture. Fold in chopped pecans and apples. Bake in tube pan for 1 hour and 20 minutes.
