SPICED PEACHES | |
1 peck firm ripe peaches, peeled 4 lbs. sugar 1 pt. water Spices, clove, stick cinnamon, vinegar, allspice Peel peaches, drop in clear water. Prepare sterilized jars. Add 1/2 cup apple vinegar to each jar and five whole cloves and one piece stick cinnamon, allspice, and set aside. Mix 4 pounds sugar and one pint water in saucepan large enough to hold peaches. Let sugar and water come to a boil, drop peaches in hot syrup, let boil until they change color. Drop into vinegar in jars, when, let set a few minutes usually you can add an extra peach. Pour hot syrup over peaches and fill jar and seal. Let stand two weeks. Delicious. You can can pears same if they are mellow. |
