SPICED PEACHES | |
Great side dish for cold roast beef or cold ham dinner. 2 cans #2 1/2 cling peach halves 3/4 c. sugar 1/2 c. vinegar 2 (3") pieces stick cinnamon 1 tsp. whole cloves 1 tsp. whole allspice Drain syrup from 1 can of peaches and set aside. Drain syrup from second can of peaches into a saucepan. Add to this syrup the sugar, vinegar and spices. Boil 5 minutes. Reduce heat, add peaches and simmer for 5 more minutes until peaches are heated thoroughly. Let stand until cool. Cover and refrigerate for 24 hours or more. If needed a little of the reserved juice may be used to cover peaches. Or reserved juice may be used to thin down mayonnaise for fruit salad dressing. |
