BLACK BEAN AND CORN SALAD 
1 can low sodium black beans
1 can low sodium canned corn
1/2 chopped white onion
2 chopped tomatoes
1-4 oz. can diced green chili
3 tbs. Trader Joe's cilantro salad dressing
3-4 dashes Tabasco
pepper to taste

Combine ingredients, mix well. Refrigerate for 1-2 hours before serving.

This is a great recipe, tho not exactly a crowd pleaser. My husband thinks it is gross but I can eat a whole bowl by myself so I don't care! I've never made it w/ Trader Joe's dressing, but instead my own vinegar/oil dressing. It is quick and easy and the ingredients are always handy. It also keeps well if you have it left over. I fix it if I'm having company who like spicey things.

Shannon, Thank you for sharing this recipe. It was fabulous! I substituted the Trader Joe's dressing with Thousand Island Salsa Ranch. We enjoyed it this evening on top of Taco Salad for dinner. It was so nummy. I can't wait to have left-over taco salad tomorrow!
