OATMEAL CAKE WITH CREAM CHEESE
FROSTING
 
1 1/4 c. boiling water
1 c. oatmeal
1/2 c. butter
1 c. brown sugar
1 c. white sugar
2 eggs
1 tsp. cinnamon
1 tsp. baking soda
1/2 tsp. salt
1 1/3 c. flour
1/2 c. chopped nuts (if desired)

FROSTING:

1 (8 oz.) pkg. cream cheese
1/2 c. butter
1 lb. powdered sugar
1 tsp. vanilla

Preheat oven to 350 degrees. Bake in greased and floured 9 x 13 inch pan for 30 minutes. Pour water over oats and let stand 20 minutes. Cream sugar and shortening (butter), then add eggs. Beat well. Add oats and dry ingredients; mix well.

Frosting: Soften cream cheese and butter. Cream both with powdered sugar. Add vanilla. Spread on cake.
