SPINACH QUICHE 
4 eggs
Slightly more than 1/2 c. milk
1/2 tsp. salt
Sprinkle of nutmeg
Black pepper to taste
1 box spinach, thawed & squeezed out well
1/3 c. onion, chopped
1 (9 inch) Frozen pie shell or quiche pan
1 c. Swiss cheese, shredded

Sprinkle onion in shell or on pan; mix cheese, eggs and spices together. Pour into crust or into pan. Bake at 350 degrees for about 1/2 hour. (Put knife into center to see if dry.)
