SPINACH QUICHE 
One 9 inch pie crust (quiche dish or pie plate)
1 tbsp. butter, softened for crust
2 c. heavy or whipping cream
4 eggs
3/4 tsp. salt
1/4 lb. sharp cheese, shredded (1 cup)
2 tbsp. butter (melted)
2 tbsp. minced green onions
1 (10 oz.) frozen chopped spinach (thawed well drained)
1/8 tsp. ground nutmeg
1/8 tsp. pepper

Preheat oven to 425 degrees. Prepare crust, spread with butter. In medium bowl with wire whisk mix cream eggs, and salt until well blended, stir in cheese, in fry pan melt 2 tablespoon butter. Add green onions, cook until tender, 5 minutes. Into cream mixture stir green onion well drained spinach, nutmeg, pepper.

Bake at 425 degrees for 15 minutes turn oven control to 325 degrees and bake 35 minutes or until knife inserted in center comes out clean.
