SQUASH CASSEROLE 
6 c. cut up zucchini squash
1/2 c. chopped onion
1 can cream of chicken soup
1 c. sour cream (Lite)
1 c. shredded carrot
1 c. seasoned bread crumbs
1/3 c melted butter

Cook squash and onion 5 minutes in boiling salted water. Drain. Mix cream of chicken soup and sour cream. Stir in carrots. Fold in squash and onion.
