SUZIE'S CARROT CAKE 
4 eggs
1 1/4 c. oil
2 1/2 c. grated carrots
2 c. flour
2 c. sugar
2 tsp. baking soda
2 tsp. cinnamon
1 tsp. salt
1 c. nuts

ICING:

1 (8 oz.) pkg. cream cheese
1 stick butter
1 box powdered sugar
2 tsp. vanilla
1 c. chopped nuts

Sift or blend flour, sugar, soda, cinnamon, and salt together. Beat eggs; add oil and dry ingredients. Add carrots and nuts. Spread in 3 (8 inch) cake pans or 2 (9 inch) pans or 1 (9 x 13 inch) pan or tube pan. Bake at 300 degrees for 30 to 45 minutes or to 1 hour, depending on pan used. Grease pans well! Cool and frost with cream cheese icing. Enjoy!
