CHERRY COKE SALAD 
1 (20 oz.) can unsweetened crushed pineapple
1/2 c. water
2 boxes sugar-free cherry jello
3/4 c. Diet Coke
1 can cherry pie filling (use low calorie if you can find it)

Drain pineapple. Bring pineapple juice and water to a boil. Add jello and stir until dissolved. Stir in pie filling and Diet Coke. Chill until slightly thickened and then fold in pineapple. Chill until firm.

Yields 8 servings.
