ROUND STEAK STRIPS ITALIANO | |
This is a nice cooler weather dish and can be served over hearty rigatoni pasta. Italian Orange Salad and Garlic Knot Rolls make the meal fit for a casual dinner party. 3 tablespoons olive oil 1 1/2 to 2 lb. top round steak (3/4-inch thick), cut into thin strips 1 red pepper, cut into strips 1 green pepper, cut into strips 1 medium onion, sliced in rings 8 oz. fresh mushrooms, quartered 2 garlic cloves, minced or pressed 1/2 teaspoon oregano or to taste salt and red pepper flakes 4 plum tomatoes, sliced into wedges 2 to 3 cups prepared pasta sauce In large skillet, heat 2 tablespoons olive oil over medium-high heat. Add round steak strips and cook until well browned, stirring often. Remove from skillet and set aside. In same skillet, heat remaining oil, and then reduce heat to medium. Add peppers, onion, mushrooms and garlic and cook until vegetables are tender, stirring often. Season with oregano, salt and red pepper flakes to taste. Stir in plum tomatoes and pasta sauce and heat to boiling point. Add beef strips back to skillet and cook until mixture is hot and bubbling. Serves 4 to 6. Submitted by: Rose |
