SALMON FOR ONE OR TWO A LA MICROWAVE | |
Microwave cooking method should result in salmon being moist and very flavorful. Recipe allows for many personal interpretations using other vegetables, seasonings and toppings. 1 OR 2 individual frozen salmon fillets olive oil 1/4 or 1/2 cup canned petite diced tomatoes, slightly drained 1 or 2 teaspoons chopped black olives a pinch or two dried basil* a pinch or two dried parsley* 1 minced garlic clove or a pinch or two garlic powder* * OR 1/2 or 1 teaspoon good jarred pesto (Classico brand is best) salt and pepper, to taste 1/2 or 1 teaspoon dry Italian bread crumbs freshly grated Romano or Parmesan cheese, for topping Coat one or two individual gratin dishes or a 1-quart baking dish (for 2 fillets together) with olive oil or cooking spray. I use porcelain, Corning Ware or Pyrex dishes. Place unwrapped fillets, still frozen, in prepared baking dish/dishes. In small bowl, combine tomatoes, olives and seasonings. Spoon over fillets. Sprinkle bread crumbs and then grated cheese over top. Cover with baking dish lid or plastic wrap vented slightly. Microwave on HIGH setting about 4-5 minutes for one fillet or 5-6 minutes for two (in 1200 watt microwave oven). May need to cook a bit longer for lower wattage ovens. Great served with wild rice or couscous and freshly steamed broccoli or green beans. Submitted by: Rose |
