ACORN SQUASH (Microwave) 
1 acorn squash
4 tsp. brown sugar
butter

Bake squash whole in microwave oven for 4 minutes. Turn over and cook 4 more minutes. Cut squash in half and remove seeds. Fill each center with about a teaspoon of butter and 2 teaspoons brown sugar. Put back into oven and bake for another 3 minutes or until done.

Since microwave ovens vary in power, you may need to adjust your cooking time.

Always a winner! Size of squash requires varying the time but it's easy to tell if it needs more time. Scoring the squash before adding the butter and other ingredients works well too.

I started it in the oven, looked at the original recipe again and did a search and found this recipe. I had cut it in half already and 4 minutes was all it took. I added the butter and brown sugar and put it back in the oven to finish it up for another 20 minutes.

The squash might not explode in the microwave, or it might, if it's not pierced. I have had them explode and believe me it is NOT NICE. So Pierce it. I usually cook them whole and pierced on a paper plate, cool them and bake the squash later in a casserole dish.

This is the first time I cooked an acorn squash and found this recipe to be so wonderfully simple. My squash was quite large so I needed to cook it an additional 5 minutes. I'm going to cook a spaghetti squash next using the same method.
