ZUCCHINI WITH TOMATOES & ONIONS 
2 lbs. zucchini, cut into 1/4 inch slices
1 lg. onion, sliced
1/2 clove of garlic, minced
3 tbsp. salad oil
1 (1 lb.) can tomatoes
1 tsp. salt
Dash of pepper
1 tsp. oregano
1 tbsp. wine vinegar
2 tbsp. grated Parmesan cheese

Arrange zucchini slices in a greased 3-quart baking dish. Saute onion and garlic in oil until lightly browned and tender. Add tomatoes, seasonings and vinegar. Heat to boiling; simmer for 1 minute. Pour tomato-onion mixture over zucchini slices in baking dish; top with grated cheese. Bake at 400 degrees for 1 hour. Yield: 8 servings.
