BAKED ZUCCHINI AND TOMATOES 
2 med. zucchini
Salt & pepper
1/4 c. butter
3 med. tomatoes, sliced
1 med. onion, sliced
1 c. butter cracker crumbs

Cut zucchini into 1/4 inch thick slices. Place zucchini in a 12 x 8 inch baking pan. Sprinkle with salt and pepper. Layer half of tomatoes on zucchini, then half of onion. Dot with butter. Repeat layering, starting with zucchini. Sprinkle top with cracker crumbs. Bake at 350 degrees for 40 minutes or until zucchini is tender.
