BAKED ZUCCHINI WITH TOMATOES 
1 med. onion, chopped
1 clove garlic, sliced
2 tbsp. butter
3 to 4 slices tomatoes
1 tsp. salt
1 tsp. wine vinegar
1/2 tsp. basil
Grated cheese
Pinch oregano
Pinch pepper
Zucchini

Saute onion, garlic in butter. Add sliced tomatoes, salt, pepper and oregano. Add vinegar and basil. Simmer 1 minute. Arrange in greased baking pan zucchini sliced about 1/4 inch. Pour tomato mixture over zucchini. Top with grated cheese. Bake at 370 degrees for 1 hour until tender.
