ZUCCHINI, TOMATO AND POTATO BAKE 
2 zucchini
2 large tomatoes
2 baking potatoes
1/3 c. olive oil
salt and pepper to taste
1/3 tsp. sweet basil
1/2 tsp. oregano
Parmesan cheese

Heat oven to 350°F. Thinly slice zucchini, tomatoes and potatoes. Arrange vegetables in lightly oiled shallow casserole dish, alternating slices of vegetables. Sprinkle with olive oil and bake until potatoes are done, around 30 to 40 minutes.

Sprinkle oregano, basil, Parmesan cheese, salt and pepper over vegetables and serve hot.
