BAKED ZUCCHINI WITH TOMATOES 
1 tsp. chopped onion
1 clove of garlic, minced
Tablespoon salad oil
1 (#2 1/2) can tomatoes
2 lb. zucchini, sliced
2 c. bread crumbs

Brown onion and garlic in salad oil; add tomatoes. Place half of the zucchini in buttered 2 quart baking dish. Add half the tomato mixture; add half the bread crumbs. Repeat layers. Bake in 400 degree oven for 1 hour.
