SUSIE LOVES CARROT CAKE 
1 lb. carrots (3 c. grated)
2 c. sugar
1 1/2 c. oil, corn or peanut
4 eggs
2 c. flour
2 tsp. baking soda
2 tsp. baking powder
1 tsp. salt
1/2 to 1 c. chopped pecans
Cinnamon
Nutmeg

Preheat oven to 325 degrees.

Combine sugar and oil in an electric mixer. Add the eggs one at a time. Sift together flour, powder, soda and salt. Add to sugar and oil while mixing. Add carrots and nuts.

Oil one 9 x 13 pan or three 9 inch cake pans. Line the bottoms with wax paper. Oil the paper. Bake 45 minutes or microwave at high 12 to 15 minutes. Rotate 1/4 turn every 4 minutes. Let stand before turning out.

Since microwave ovens vary in power, you may need to adjust your cooking time.
