S.'S CARROT CAKE 
1 c. self-rising flour
1 tsp. bicarbonate of soda
1/2 tsp. ground cinnamon
1/2 tsp. ground cloves
1 c. brown sugar, firmly packed
1 1/2 c. finely grated carrot
1/2 c. raisins
1 c. finely chopped walnuts
2/3 c. oil
2 eggs, lightly beaten

Grease loaf pan, line base with paper, grease paper. Sift flour, soda, spices into bowl, stir in sugar, carrots, raisins and nuts. Stir in combined oil and eggs. Beat on medium speed with electric beater for 5 minutes. Bake at 350 degrees for 1 hour.

CREAM CHEESE FROSTING:

2 oz. cream cheese
1 oz. butter, soft
1 tsp. lemon rind
1 1/2 c. confectioners' sugar

Beat cream cheese, butter and lemon until smooth. Gradually beat in sifted sugar.
