“ITALIAN ORANGE SALAD” IS IN:

ITALIAN ORANGE SALAD 
When I was a young girl I remember my mother making this salad on occasion. I loved it. All my life it has been my most favorite salad, and although so simple, serving it with special dinners or on holidays has always seemed to impress.

1 head tender green Leaf lettuce or Romaine lettuce
large navel oranges, as needed
1 purple onion
1 can whole black olives, drained
freshly ground black pepper
Italian salad dressing or favorite (Blue cheese is the bomb!)

Note: This salad needs to be plated per individual. You will want to have two large orange slices per plate, so figure about 1 orange per one or two adults and use smaller slices for children's portions or save for snacking.

Tear lettuce leaves in bite-size pieces and arrange enough leaves to sufficiently line salad plates.

Slice oranges and laying each slice flat, with sharp knife trim away peel and white membrane all around edges. Arrange 2 orange slices over each lettuce lined salad plate.

Thinly slice purple onion and separate into rings. Scatter 4 or 5 slices over oranges.

Add 3 or 4 black olives over orange slices.

Season with black pepper. No salt is needed.

Drizzle salads with only 1 tablespoon dressing, keeping salad light, as it should be.
