SUE'S SWEET POTATO SOUFFLE 
2 med. sweet potatoes, peeled
1 c. milk
1 (20 oz.) can crushed pineapple
3/4 c. melted butter
1 tsp. vanilla
1 c. raisins
1 c. chopped pecans
1 c. sugar
Pinch of salt

Grate potatoes and place in milk to prevent discoloration. Add remaining ingredients, stirring well. Pour into a greased 2 quart casserole dish. Bake at 350 degrees for 45 to 55 minutes or until potatoes are tender.
