MINI SPINACH QUICHES 
10 to 16 oz. fresh spinach
1 large onion
10 tbsp. butter
5 eggs
1 (16 oz.) bag grated Parmesan cheese
2 garlic cloves
1/2 tsp. dried thyme leaves
1/2 tsp. red pepper
1 3/4 cups Italian style bread crumbs

Preheat oven to 350°F.

Rinse and grate spinach and onion in a food processor. Drain off excess liquid and pour spinach and onion into a large bowl.

Melt butter in a microwave (30 to 60 seconds).

Add eggs and butter to bowl and stir with a wooden spoon. Stir in Parmesan cheese and garlic (minced or pressed). Stir in thyme and red pepper. Finally mix in bread crumbs.

With an ice cream scoop, form 1-inch balls and place close together on a (lightly greased or sprayed) baking sheet.

Cook in upper part of the oven until firm, about 25 minutes.

Let cool 5 minutes and serve immediately.

Makes about 25.
