SWEET POTATO PIE 
3 or 4 lg. sweet potatoes
6 eggs
1 tbsp. cinnamon
3 tbsp. rum or lemon flavor
2 sticks of butter
1 1/2 c. of sugar (sweeten to taste)
Pinch of baking soda

Peel sweet potatoes, cut in cubes, put in large saucepan. Add baking soda and water, place on stove and let come to a boil. Drain off the water after it comes to a boil. Add more water, place back on stove and let boil until potatoes are tender. Remove from stove and drain off the water. Add sugar, eggs, butter, flavor and cinnamon. Blend all together until smooth. Pour in 9 inch unbaked pie shell. Bake at 350 degrees for 45 minutes or until firm and brown.
