SWEET POTATO PUDDING | |
1 lb. sweet potatoes, peeled & cut in chunks 6 eggs, beaten 3 c. powdered sugar 1 1/2 c. butter, softened 1 tsp. cinnamon 1 tsp. nutmeg 1/2 tsp. lemon peel 1/2 c. apple cider 1/2 tsp. rum or brandy flavoring 1/2 c. brown sugar, packed 1 c. whipping cream 2 tbsp. granulated sugar In a large saucepan, boil sweet potatoes until tender. Preheat oven to 375 degrees. In large mixing bowl combine mashed potatoes, eggs, powdered sugar, butter, cinnamon, nutmeg, lemon peel, cider and rum flavoring; blend well. Pour into 13 x 9 x 2 inch pan. Bake 40-45 minutes or until top is firm. Sprinkle brown sugar over top. Bake 5 minutes more. Serve with whipped, sweetened cream. 12 servings. |
