PEACH SAUCE (ICE CREAM OR CAKE
TOPPING)
 
Mix 2 cups of peaches (chopped in a blender), 1 1/2 tbsp. cornstarch, 1 cup sugar, 1/2 tsp. concentrated lemon juice and cook.

Stir constantly on medium-high heat until thick (1 minute).

I love this! I made 2 batches, the first one I made I discovered that I was out of corn starch and substituted 2 1/2 tbsp. of all purpose flour, and cooked it a little longer, and it came out fantastic! I also did not have any concentrated lemon juice, so I used the same amount of concentrated sweetened lime juice, and about 1/2 tsp. of fresh lemon juice, was wonderful. The second batch I made I finally had corn starch, but I did the same thing with the lime juice.

Delicious! I halved the recipe and added cinnamon and nutmeg for more flavor. I also used flour instead of cornstarch. Turned out great.
