SWEET POTATOES WITH APPLES 
2 lb. sweet potatoes
1/4 c. dark rum
2 tbsp. molasses
1/4 tsp. nutmeg
2 lg. cooking apples
1/4 c. dark brown sugar
1/4 tsp. cinnamon

Preheat oven to 400 degrees. Bake potatoes 30-45 minutes. Peel and cut in half lengthwise. Place in greased casserole in 1 layer. Peel apples and cut in 6ths. Slice each section into thin slices.

Combine apples in saucepan with remaining ingredients. Bring to boil over medium heat, cook and stir for 5 minutes. Reduce oven to 375 degrees. Pour apples over potatoes. Bake 15 minutes, occasionally spooning juices over potatoes.
