OLD FASHION FRUIT CAKE | |
4 c. sifted plain flour 2 c. butter 2 c. sugar 4 tsp. cinnamon 4 tsp. allspice 4 tsp. nutmeg 1 tsp. baking powder 1/2 tsp. baking soda 1/4 tsp. salt 1 lb. raisins 1 lb. currants 1/2 lb. candied pineapple 1/2 lb. candied cherries 1 c. chopped figs 2 qts. cut up pecans 1 c. dark molasses 1/2 c. strong black coffee 10 eggs 1/2 c. fresh orange juice Reserve 1/2 cup flour to sprinkle on top of fruits. Sift flour, baking powder, spices, and soda together. Cream butter and sugar. Add eggs, one at a time. Beat after each addition. Add syrup and flour and mix well. Add all liquids. When well blended, add fruits dredge with flour. Line pans with brown paper from paper bags; butter. Pour batter in pans. Bakes best in heavy iron pot. Bake in 200 degree oven about 2 hours. |
